Marinated Barbeque Chicken - This simple, two-in-one, recipe for barbeque chicken comes with two different cooking options, whole or skewered. Marinating in the fridge for a few hours creates a flash of flavor that is irresistable in this quick and easy chicken barbeque recipe.

Ingredients to make Marinated Barbeque Chicken
1 kilo chicken (whole or cut in pieces)
1 cup soy sauce
1 head garlic, minced
1 onion, finely chopped
3 tablespoons of calamansi juice or lemon juice
1/2 cup of sprite, 7up or beer
2 cups of tanglad (lemon grass) for whole chicken
1 teaspoon ground black pepper
3 tablespoons of brown or white sugar
Directions to make Marinated Barbeque Chicken
• Marinate the chicken in soy sauce, calamansi juice (or lemon juice), minced garlic, chopped onions, soda or beer, sugar and pepper. • Marinate in the refrigerator for 1 to 3 hours.
• Stuff the chicken cavity with tanglad (lemon grass) if to be grilled whole.
• Cook chicken on grill or in oven until golden brown
**To barbeque chicken that are cut into pieces, follow the same procedure above but omit stuffing the leg with lemon grass. Thread the chicken pieces on barbeque skewers and grill on live charcoal until cooked.
Barbeque Shrimp Scampi Style Recipe

Ingredients To Make Barbeque Shrimp Scampi Style Recipe:
•2 pounds large shrimp, peeled
•1/4 pound butter, melted
•1/4 cup fruity olive oil
•2 scallions, with tops, minced
•6 cloves garlic, pressed
•1 lemon, juice and zest
•1/2 cup cilantro, minced
•Salt and pepper, to taste
How to cook Barbeque Shrimp Scampi Style Recipe:
1.Place shrimp in a glass utility dish.
2.Combine marinade ingredients, except salt and pepper, in medium container and pour over shrimp, reserving some marinade.
3.Cover and set aside while you preheat the grill.
4.Skewer shrimp, 2 to the stick, from tail through neck so you can lay the shrimp flat on the grill and turn them easily on the skewers.
5.Dab with additional marinade.
6.Pour marinade in small, flameproof pan and heat to boiling (either on grill edge or on stove).
7.Season with salt and pepper.
8.Grill shrimp, turning once, just until pink, 2 to 3 minutes at the most.
9.Serve the boiled marinade as a hot dipping sauce.

Beef Brochettes on the BBQ - Luscious, lean, beef, the best of the best, is used for this “melt in your mouth” BBQ kabob recipe! Ingredients to make Beef Brochettes on the BBQ
1 1/2 lb Beef, lean such as filet mignon or sirloin steak
2 Med Red peppers
2 T Coriander seeds
1/4 t Red pepper flakes
4 ea Thyme, fresh or 1 tsp dried
2 T Honey
4 T Coriander, fresh coarsley ch
2 ea Red onions, about 1/2 lb
2 T Lemon juice
1 t Garlic, chopped
1/2 t Cumin
1/4 c Red wine, dry
2 T Olive oil
Salt and pepper to taste
Directions to make Beef Brochettes on the BBQ
Preheat a charcoal grill to high or an oven broiler to 500 degrees. If wooden skewers are used, soak them in cold water until ready to use.
Cut the beef into 1 inch cubes. There should be 24 cubes. Peel and cut the onions into 24 1 inch cubes. Reserve the remaining onion for another use. Set the cubes aside until ready to cook. Cut away and discard the pepper cores and seeds. Cut the peppers into 24 equal-size pieces and set aside until ready to cook.Cut the beef into 1 inch cubes. There should be 24 cubes. Peel and cut the onions into 24 1 inch cubes. Reserve the remaining onion for another use. Set the cubes aside until ready to cook. Cut away and discard the pepper cores and seeds. Cut the peppers into 24 equal-size pieces and set aside until ready to cook.
Combine the meat and remaining ingredients in a mixing bowl. Blend well and marinate for 15 minutes, reserving some marinade for basting, Drain the meat and arrange equal portions of meat, onions and peppers on skewers.
Place brochettes on the grill and cook for 4 minutes for rare, basting often with the reserved marinade while turning .
**If the brochettes are to be cooked under the broiler, arrange them on a rack about 4 inches from the source of heat, leaving the door slightly ajar. Cook for about four minutes for rare, basting with reserved marinade and turning often.
