Ingredients to make Best Salmon Salad
1/4 c. frozen orange juice concentrate, thawed
1 T. + 1-1/2 tsp. white wine vinegar or cider vinegar
1 T. chopped fresh basil OR 1 tsp. dried basil leaves
1-1/2 tsp. olive oil
1 (8-oz.) salmon fillet (about 1-in. thick)
4 c. torn mixed greens
3/4 c. sliced strawberries
10-12 thin cucumber slices, cut into halves
1/8 tsp. coarsely ground black pepper

Secret Ingredient BBQ Burgers - Fire up the Grill, for this hearty, homemade “special”, BBQ burger recipe! For this innovative, new recipe, we combined all the toppings and added them to the raw ground beef, creating an out of this world,moist, juicy, barbequed hamburger. A definate “must try”!

Ingredients to make Secret Ingredient BBQ Burgers
1/2 c sour cream
3 green onion, chopped,with tops
3 TB bread crumbs
1/2 ts Worcestershire sauce
1/2 ts lemon pepper
1 lb lean ground beef
4 hamburger buns
shredded lettuce
1 tomato, 4 slices
1 yellow onion, sliced in 4
2 ts mustard
1 TB mayonnaise
1 TB catsup
Directions to make Secret Ingredient BBQ Burgers
Prepare white or yellow sweet onion by slicing in thick slices, place in plastic bag or glass jar with ice water, seal and refrigerate until ready to use. This makes the onions very crisp and juicy.
Slice a vine-ripened tomato into thick slices. Mix sour cream, chopped green onions, bread crumbs, Worcestershire sauce and lemon pepper seasoning. Mix this in with the ground meat until combined well. Shape into 4 patties.
Cooking the hamburger patties: GRILL: Place meat on grill over hot coals and cook to desired doneness, turning only once or twice. BROIL: Place meat in broiler pan; broil to desired doneness. MICROWAVE: Place meat in a microwave-safe dish and cover loosely with plastic wrap (made for microwave purposes); vent one edge slightly. Microwave on highest power for 3 minutes. Turn patties over and cook 3 minutes longer or until desired doneness. Rotate the dish 1/4 turn every 1-2 minutes. Drain well
Mix the mayonnaise, mustard and catsup. Blend well.
To serve, divide the catsup mixture evenly on the warmed hamburger buns, top with a meat patty, tomato slice, onion slice and shredded lettuce. Also good with alfalfa or radish sprouts.

Beef Brochettes on the BBQ - Luscious, lean, beef, the best of the best, is used for this “melt in your mouth” BBQ kabob recipe! Ingredients to make Beef Brochettes on the BBQ
1 1/2 lb Beef, lean such as filet mignon or sirloin steak
2 Med Red peppers
2 T Coriander seeds
1/4 t Red pepper flakes
4 ea Thyme, fresh or 1 tsp dried
2 T Honey
4 T Coriander, fresh coarsley ch
2 ea Red onions, about 1/2 lb
2 T Lemon juice
1 t Garlic, chopped
1/2 t Cumin
1/4 c Red wine, dry
2 T Olive oil
Salt and pepper to taste
Directions to make Beef Brochettes on the BBQ
Preheat a charcoal grill to high or an oven broiler to 500 degrees. If wooden skewers are used, soak them in cold water until ready to use.
Cut the beef into 1 inch cubes. There should be 24 cubes. Peel and cut the onions into 24 1 inch cubes. Reserve the remaining onion for another use. Set the cubes aside until ready to cook. Cut away and discard the pepper cores and seeds. Cut the peppers into 24 equal-size pieces and set aside until ready to cook.Cut the beef into 1 inch cubes. There should be 24 cubes. Peel and cut the onions into 24 1 inch cubes. Reserve the remaining onion for another use. Set the cubes aside until ready to cook. Cut away and discard the pepper cores and seeds. Cut the peppers into 24 equal-size pieces and set aside until ready to cook.
Combine the meat and remaining ingredients in a mixing bowl. Blend well and marinate for 15 minutes, reserving some marinade for basting, Drain the meat and arrange equal portions of meat, onions and peppers on skewers.
Place brochettes on the grill and cook for 4 minutes for rare, basting often with the reserved marinade while turning .
**If the brochettes are to be cooked under the broiler, arrange them on a rack about 4 inches from the source of heat, leaving the door slightly ajar. Cook for about four minutes for rare, basting with reserved marinade and turning often.
